Lime Shortbread Cookies

These sounded so summery and yummy I decide to post the recipe but I have not tried the recipe - if you do, let me know!

Lime Shortbread Cookies from Tribeca Treats

6 oz. butter (at room temp)
1/4 cup sugar
1/4 cup confectioner's sugar
2 tbsp lime zest
2 tbsp fresh lime juice
1/4 tsp salt
1 1/2 cup flour

1 cup confectioner's sugar
2 tbsp fresh lime juice

1. Mix the butter and 1/4 cups of each sugar on high speed until butter is completely smooth. Add zest and 2 tbsp of lime juice and mix until combined.

2. Add salt and half of the flour and mix on low speed until combined. Add remaining flour and mix on low until combined.

3. Remove dough from bowl and roll into a log about 1 1/2 to 2 inches in diameter. Wrap in plastic wrap and chill for at least 1 hour.

4. Preheat oven to 350 degrees. Remove dough from fridge and slice off pieces about 3/8 inch thick. Arrange on tray about 1 inch apart and bake for 15-18 minutes, until edges are dark golden brown.

5. While cookies are cooling, put remaining confectioner's sugar and juice in a bowl and mix with a fork to create frosting.

6. Spread frosting on room temperature cookies, allow to set for 20 minutes, then enjoy!
